Ok so I have tried my fair share of gluten free desserts but this brownie is at the top of the list. I measure a gf success by how much it tastes like "the real thing." Though they're not "healthy" per say... by eating gluten free we are all healthier so I think it still applies to my blog. Check out the King Arthur's Gluten Free line available at most grocery stores such as Stop n. Shop. The box mix brownies are found in the baking aisle and are completely delicious. They are thick with soft chocolately inside with a perfectly chewy outside. Try them- you'll love them! Share them with your friends- they'll never know.

INGREDIENTS:
1 package of Aleia's Savory Flavored gluten-free stuffing mix, 1 pkg. maple/apple flavored chicken sausage (4 links) skinned and crumbled, ¾ c. red onion finely chopped, 1 can organic chicken broth, 6 tbsp. butter (or butter substitute), ½ cup craisins, 2 tbsp. chopped fresh sage, 3 crushed cloves of garlic, 2 macintosh apples peeled and diced

DIRECTIONS:
Heat oven to 350 degrees. In a large skillet pan melt the butter, onions, apples and garlic over medium heat. Once onions are tender add fresh sage and the chicken sausage and brown lightly. (They are very low fat so don't expect a lot of browning). Add chicken broth and bring to a boil. Pour dry stuffing mix into a bowl. Pour the broth mixture over the dry stuffing mix. Spoon the mixture into a casserole dish and cover with foil. Bake for 20 minutes. Bake uncovered for an additional 10 minutes for a crisy top. Serves 6. (Allergy key: Gluten Free, Nut Free)

All Can Eat Foods

This place is absolutely worth the drive to 937 Main Street in Randolph, MA. This bakery has everything you can think of and it's all gluten free! I tried the blueberry muffin and the sandwich bread. Both were the best I've had. They had lots of other yummy treats like cupcakes, cinnamon rolls and cookies. They also had a restaurant that serves breakfast, lunch and dinner. I had the pizza which was very good. I plan a trip back soon! Try it out and let me know what you think. For those of you with a dairy intolerance I recommend doing what I did... use earth balance instead of butter and soy milk instead of regular milk. It was still delicious.

I started off with Colombian chicken empanadas and homemade potato chips w/ shallot dip as an appetizer to share with the table. For dinner I had the tenderloin au poivre with roasted potatoes. Three Cheers for LTK! I went there recently expecting to just have a cocktail and the bar and wait to eat until I got home but I was pleasantly surprised! When the chef found out about my gluten allergy he came out and together we created a new gluten free dish. I guess this is what legal test kitchen is all about. They made me delicious mini sliders using the gluten free rolls they had in stock. I believe they were Gillians. Check out LTK next time you're in the seaport district. The bartender was also so much fun and made us feel like we were regulars even though it was our first visit. He was very knowledgeable and quickly suggested a Chopin (potato vodka) martini with fresh watermelon puree. 1c. liquid egg whites
3 tbsp. fresh store bought salsa (in produce aisle)
1 pad of butter (soy butter is a good alternative)
Scallions for garnish (optional)

DIRECTIONS:
Heat up nonstick pan over medium heat. Add butter and salsa. Heat over medium heat until onions are cooked through. Add egg whites and scramble. Garnish with thinly sliced scallions

Serve with gluten free toast and fresh fruit. For the real latin flavor skip the toast and go for an arepa- a latin american corn cake. They can be purchased at stores that carry latin american food. If you live near Boston- try East Boston- lots of stores with Colombian food and restaurants.

2 med acorn squashes, halved and seeded, 2 tsp extra virgin olive oil,
½ lb tofu, pinch of ground cinnamon, pinch of ground nutmeg, 2 tsp salt
1/2 medium onion finely chopped, 4 minced garlic cloves, 1 cup quinoa
1/4 cup golden raisins, 1/4 cup flat leaf parsley (fresh), 2 tbsp crushed walnuts

DIRECTIONS:
1. Preheat oven to 400 degrees and place squashes, cut side down in oven safe dish. Bake until tender - 35 to 40 mins
2. Heat oil in 4 qt pot with tight fitting lid over med-high heat. Add tofu, pinch cinnamon and nutmeg and 1 tsp salt. Cook until browned. Transfer tofu to a bowl using slotted spoon and keep as much cooking liquid in pot as possible.
3. Add onion and cook until translucent. Add garlic and cook until fragrant, about 30 seconds. Add remaining salt and stir to combine. Meanwhile cook quinoa separately about half of required time. Add par-cooked quinoa to onion/garlic and add 1 cup water. Reduce heat and cover. Cook about 10 to 15 minutes. Fluff with a fork, add reserved beef, raisins, parsley and walnuts.

Fresh? Frozen? Canned?

Well... you all know that fresh vegetables are the best! Take it the next step by choosing organic vegetables (especially for those where the skin is eaten). Buy in season or locally grown vegetables! This will also increase the freshness.

Make sure that you stock up on frozen organic vegetables for those times when you're rushing around and can't get to the market. If you look at the ingredients of frozen vegetables you will notice that there are no preservatives or chemicals! Hooray! You can also defrost these veggies by moving them from the freezer to the refrigerator into glass containers with bpa-free lids. I was recently on the road and google searched "gluten-free + Worcester" and came up with this great restaurant pick. I recommend using google to find safe restaurants when you are on the road or traveling.

The Boynton Restaurant on 117 Highland Ave in Worcester has been around since the 1930s! It now has been updated to include a great lunch or dinner spot with a gluten free menu! The staff is also very knowledgeable about gluten. I had a garden salad with gluten free italian dressing, the Red Hot Chicken Pizza and the gluten free chocolate mousse pie. It was delicious!!! I highly recommend a visit to The Boynton! Check it out and tell them I sent you!

Product Pick: Bell & Evans Gluten Free Chicken Tenders

This restaurant is a great way to enjoy Boston's historic North End again. It is also a great pre-garden event dinner spot. There is an extensive gluten free menu including appetizers, pizzas, salads and pastas. Their pasta is handmade- a rarity for gf restaurants. They boast using all of the freshest ingredients. There is a nice big bar and lots of great gluten free cocktails. The proprietors Carla and Christine Pallotta are committed to providing excellent gluten free food and told me that they have a section of the kitchen that is completely gluten free to prevent contamination.

2 pounds of butternut squash, peeled and seeded (buy it precut if you can),
1 tablespoon extra virgin olive oil,1 large onion chopped, 2 garlic cloves minced,1 jalapeño chile minced (no seeds), 1 14.5-ounce can diced tomatoes, drained, One 28-ounce can crushed tomatoes, 1 cup water, 1 cup apple juice (or cider), 2 tablespoons chili powder, 1 tablespoon cumin, 1 tablespoon crushed red pepper (omit if you want it to be less spicy), 1 teaspoon salt, 1/8 teaspoon cayenne pepper, 3 cups canned black beans rinsed and drained

1. Cut the pumpkin or squash into 1/2-inch chunks and set aside. By cutting them the same size they will cook more evenly 2. Heat the oil in a large pot over medium heat. Add the onion, garlic, and jalapeño and squash. Cover and cook, stirring occasionally, until softened, about 10-15 minutes. Add the diced tomatoes, crushed tomatoes, water, apple juice, chili powder, crushed pepper, salt, and cayenne, and stir well. Bring to a boil, lower the heat, cover, and simmer until the squash is tender, about 30 minutes. 3. Add the beans, and more water if the chili is too thick for your taste. Cover, and continue to simmer about 15 minutes to blend flavors. Serve hot. Kosher salt and freshly ground black pepper,
1/2 cup all-purpose gluten free flour,

3/4 c. gluten free bread crumbs (seasoned-see company chicken recipe),
2 egg whites,
1/2 tbsp. water,
2 tbps. organic olive oil,
3 tbsp. butter,
1/3 c. freshly squeezed lemon juice (2 lemons), lemon halves reserved,
1/2 c. organic white wine (optional- to deglaze the pan),
2 tbsp. capers,Sliced lemon, for serving, Chopped fresh parsley leaves, for serving

DIRECTIONS:

Mix the flour, 1/2 teaspoon salt, and 1/4 teaspoon of pepper in a shallow plate. In a second plate, beat the egg and 1/2 tablespoon of water together. Place the bread crumbs on a third plate. Dip each chicken breast first in the flour, shake off the excess, and then dip in the egg and bread crumb mixtures.

Heat 1 tablespoon of olive oil in a large saute pan over medium to medium-low heat. Add the chicken breasts and cook for 5-7 minutes on each side, until browned.
For the sauce, wipe out the saute pan with a dry paper towel. Over medium heat, melt 1 tablespoon of the butter and then add the lemon juice, wine, the reserved lemon halves, 1/2 teaspoon salt, and 1/4 teaspoon pepper and capers. Boil over high heat until reduced in half, about 2 minutes. Off the heat, add the remaining 2 tablespoons of butter and swirl to combine. Discard the lemon halves and serve 1 chicken breast on each plate. Spoon on the sauce and serve with a slice of lemon and a sprinkling of fresh parsley.

<link rel='alternate' type='text/html' href='http://glutenfreeandhealthy.blogspot.com/2009/08/whats-for-dinner-tonight-gf-chicken.html' title='What's for dinner tonight?
This bread is really good! It doesn't have the strange after taste that most gluten free bread products have. I have tried their sandwich bread- great as toast with butter or jelly. It is also a great base to make gluten free garlic bread. (heat up butter and 1 small garlic clove in the microwave- spread onto toast) I have also tried their hamburger buns- so good. They are also used at Burton's Grille. You can typically find this in the frozen foods section of health food stores or some grocery stores that carry a few gluten free items. I buy it at Hingham Fruit Center Marketplace in Hingham, MA.
Even the healthiest eaters need dessert sometimes! I recommend you relive a childhood favorite... chocolate chip cookies! My friend Adam brought these to my house for a bbq. Celiacs and non-Celiacs alike LOVED these cookies. Since then my husband has made them for me- very easy recipe. If you are really craving something extra chocolatey press in m&ms a few minutes before their done.

Let's face it... drinking is a dangerous thing for celiacs! Essentially all beer (except gluten-free beer) is unsafe. Now what about wine? All wine is technically gluten-free. However, most wine is high in sulfites which tend to cause headaches and digestive issues. Both of those are common symptoms for celiacs. I recommend Frey Vineyards. They have some great organic wines (no sulfites added) at a reasonable price. Check out their website to find out where to buy a bottle near you. www.freyvineyards.com.

Ingredients:
4-6 boneless chicken breasts (hormone and antibiotic free if possible),
2 egg whites,
¼ c. Rice or Soy Milk,
1 – 1 ½ cups Gillian’s Foods bread crumbs,
½ stick of butter,
1 lb. of mushrooms sliced,
4-6 slices of Muenster cheese (alternative: Swiss Cheese),
1c. of organic canned chicken broth,
2 tbsp. Italian Seasoning,
1 tsp. garlic powder,
Salt & Pepper to taste,

DIRECTIONS:
Preset Oven to 350˚. Gently flatten chicken breasts with a meat mallet. Place chicken breasts in zip lock bag or a covered dish and soak in the egg-milk mixture for 1-2 hours. This tenderizes the chicken.

Next, season bread crumbs with Italian seasoning, garlic powder, salt and pepper.

Then, remove chicken from the bag and sprinkle with salt and pepper. Dredge in bread crumbs.

Melt a few pats of butter in a heavy skillet over med-high heat. Add chicken and cook until brown, about 3 minutes each side. Continue to add pats of butter (if needed) to brown additional chicken breasts. Transfer to glass baking dish.

Melt remaining 2 tbsp of butter in the same skillet. Add mushroom and cook until soft, stirring occasionally. Approx 5 minutes.

Spoon mushrooms over chicken, top with one slice of Muenster cheese.

Add cup of chicken broth to the dish and bake until chicken is cooked through. Approx. 25 minutes.

Side Dishes:
Steam a few handfuls of green beans. Once cooked sprinkle lightly with salt and pepper.
Also great with Alexia Oven Fries- Olive Oil, Rosemary and Garlic Flavor. Found in the frozen food section. Cook per directions.

INGREDIENTS:
1 pkg. frozen stir-fry beef strips (no hormones, no antibiotics if possible),
1/2 c. chopped broccoli,
1/2 c. chopped carrots,
½ chopped red bell pepper,
2 chopped scallion stalks,
½ c. snow peas,
1 c. brown rice,
2 c. water,
2 tbsp organic olive oil,
½ c. beef broth,
2 tbsp. organic wheat-fee tamari soy sauce (Wheat-free Tamari San-J or Bragg’s Amino),
1 tsp. salt,
½ tsp. pepper,
2 crushed garlic cloves,
½ tsp crushed red pepper flakes,
2 tbsp. corn starch,
2 tbsp. of butter,

DIRECTIONS:
Add 2 cups of water and 1 cup of brown rice to a saucepan. (Optional: Add 1 tsp. salt and 1 tsp. olive oil to water) Bring to a boil. Then reduce to low and simmer covered until fully cooked. Approx. 20 minutes.

Meanwhile, in a separate wok or large frying pan add olive oil, garlic, carrots, peppers, broccoli and snow peas. Cook on a medium heat for 5 minutes. Add beef broth and soy sauce. If broth begins to boil, lower heat to a simmer.

Cut frozen beef across the grain into thin strips. This is easier to do when frozen. If you prefer use a peeler. Add salt and pepper to the steak strips and drizzle with a little olive oil. Feel free to cut the strips into chunks or thinner strips if you prefer. Add steak strips and scallions to the stir-fry and cook until steak is browned. Add corn starch to thicken the sauce if needed. Finish by adding in butter and crushed red pepper flakes. Stir thoroughly.

Serve stir-fry over brown rice. Garnish with finely chopped fresh scallion.

<link rel='alternate' type='text/html' href='http://glutenfreeandhealthy.blogspot.com/2009/08/whats-for-dinner-tonight-beef-stir-fry.html' title='What's for Dinner Tonight? ½ tsp. pepper,
1 bag Tinkyada Pasta Joy Rice Penne Pasta,
DIRECTIONS:
Heat olive oil and garlic over low/med heat until garlic is lightly browned. Avoid higher heat since garlic tends to burn easily. Add both cans of tomato sauce, parsley, basil, bay leaves and salt & pepper. Bring to a boil. Reduce heat to low and cover. Let simmer for 30 minutes. If you are a garlic lover like me...keep those garlic cloves in- they will be sweet and delicious. If not, remove garlic cloves before serving.

Cook rice pasta per directions. Cook only the amount you will eat- this does not reheat well. Also note that rice pasta cooks much faster than traditional pasta so watch it closely or you may have mush!

Freeze remaining sauce in freezer-safe containers. Be sure to let out all excess air from containers by “burping” the lid. Also avoid oversized containers which will cause freezer-burn. Defrost at a later date for a quick and easy dinner!

Enjoy with a glass of Frey Vineyards Organic Cabernet Sauvignon! Mangia!

GF Turkey Tacos

Ingredients:
1 lb. ground turkey,
2 tsp. olive oil,
2 crushed garlic cloves,
2 chopped scallions,
3 tbsp. finely chopped fresh cilantro,
1/2 chopped large red bell pepper,
2 tbsp cumin,
1 tsp salt,
1 tsp pepper,
2 tsp Adobo,
1 tsp cajun seasoning,
Optional: 1 finely chopped and seeded jalapeno or tabasco to taste,
Mission White Corn Tortillas,
1 can refried beans (black or pinto),
Garnish with lettuce, tomato,
Top with organic salsa and avocado

Directions:
First, mix all dry seasonings and then add to ground turkey. Add olive oil to pan and heat (med/high). Brown seasoned turkey, garlic and peppers. Mix in scallions and cilantro. Continue cooking until turkey is browned.

Next, spray pan with olive oil and heat corn tortillas in a pan. Microwave will also work but provides less crunch.

Then, heat up refried beans in the microwave. Spread on heated tortillas.

Finally, add turkey to tortillas with beans and top with your favorite toppings such as: lettuce, tomatoes, organic salsa and avocado. Eat with friends and family!

Allergy Key: Gluten-Free, Dairy-Free, Nut-Free, Soy-Free

<link rel='alternate' type='text/html' href='http://glutenfreeandhealthy.blogspot.com/2009/08/whats-for-dinner-tonight-turkey-tacos.html' title='What's for Dinner Tonight?
